Brink's Meats offers friendly atmosphere, good prices

New store also features Rub My Rib BBQ catering service.

Brink’s Meat Market, one of Pueblo West’s newest businesses, offers good meat at good prices with a small, family owned, friendly atmosphere.

It’s something owners Dayle and Nicki Brinkley feel is important, and something they thought Pueblo West was lacking, which is why they opened their store July 30.

“We’re just trying to offer something in Pueblo West that (people) don’t have,” Dayle Brinkley said. “I guarantee you’re not going to go somewhere else and find better pricing and we’re going to give you a good cut. Come in and you’ll get what you want, for a good price.”

Brink’s Meat Market is a full-line meat market. All the butchering is done on-site, and sausage is made from scratch. They carry steaks, pork, beef, chicken, sausage, lamb - just about everything except fish.

Meat can be cut to order. If a customer wants a particular steak but doesn’t see one in the case to their liking, Brink’s will cut what they want.

The store also offers package “freezer” deals, which include several pounds of different items to fill a freezer. The packages vary and are based at market value. Brinkley said substitutions can be made if requested.

The Brinkley’s are familiar with the food business. Nicki’s family has been in the grocery business for the past 50 years and still owns three stores in the San Luis Valley. Dayle and Nicki owned a grocery store in Walsh, from 2001-2007, when they moved to Pueblo West.

“We’ve been cutting meat a long time, we have a lot of experience,” he said. “But Walsh, where the population was about cut in half in seven years, it’s tough to run a business there.”

He said it was time for his family to move somewhere that provided more opportunities for the couple’s three children, ages 9, 7 and 4, and Pueblo West seemed like a good fit.

The meat market isn’t the only thing keeping the family busy. They also run Rub My Rib BBQ, takeout and catering. The takeout area is located in the meat market and features a variety of food. There are sandwiches, beef, brisket, pork, spareribs, the “basics of barbecue,” as Brinkley explained.

Rub My Rib offers catering for large or small groups. And like the meat market, all the cooking and preparation is done on-site.

Located at 324 S. McCulloch Blvd., Brinkley said he hopes local residents will come by and check out what the meat market has to offer. He hopes they’ll find a nice, friendly atmosphere where they can get exactly what they want without breaking the bank.

“Why should people drive all the way across town (to other meat markets)?” Brinkley said. “It’s all here.”
