New Pueblo West restaurant specializes in barbecue

Smoked meats, complemented by a variety of side dishes is the new restaurant's speciality.

In the mood for some smoked barbecue and homemade goodies? Then visit Pueblo West’s newest restaurant, Adams Ribs.

The restaurant specializes in freshly smoked meats, from pork spare ribs and brisket to ham and pork loin. A variety of side dishes like baked beans, cole slaw, potato salad, and curly fries, are homemade.

“Our brisket is smoked overnight, for 12 hours,” said Susan Adams. She and her husband, Dan, along with son Michael and his wife, Trista, run the restaurant. “It’s a family thing we’re kind of all doing together. And we’ve had a lot of friends and extended family give us a lot of support to get this open.”

Restaurants and barbecue are nothing new to the family. Susan and Dan have both been involved in the restaurant business for more than 30 years, meaning Michael grew up alongside it too. They owned Charlie’s Pit barbecue in Pueblo for eight years.

“We decided to take a break from the restaurant business for awhile, but it’s our calling,” Susan said. “This is what we know and what we’re doing.”

The family had been talking about opening a new restaurant for some time, but were waiting for the perfect location to open in Pueblo West. When their place - 181 S. Purcell - came available, they jumped on it.

She said they chose Pueblo West partially because they’re residents here, but also because they don’t feel there are very many alternatives to Mexican food in the area and wanted to give diners a choice.

“The Hen House is always busy because it’s not Mexican,” she explained. “And we have hamburgers and chicken too, so you don’t have to have barbecue when you come in.”

Adams Ribs opened on Jan. 5, so it's just getting started. But Adams said they eventually plan to offer a “blue plate special” each day that isn’t barbecue for some additional choices. Down the road they’d like to offer catering as well.

Hungry folks who patronize Adams Ribs will be treated to good food and good service, Adams said.

“I think they’re going to come in and get a good meal for the money, and good service,” she said. “I strive for good service. None of our meats are ever frozen, and mostly everything is homemade. It’s good food.”

Adams Ribs offers sit-down dining and carry out options. There are family packs to serve four people, or supreme packs that can serve up to eight. Anything on the menu can be prepared to go.

The restaurant, open from 11 a.m. to 7 p.m. Monday through Saturday, can be reached at 647-0003. Carry out orders can be called in ahead of time so they’re ready when picked up.
